We love getting the grill out, even for weeknight meals. Once we moved into a house with a backyard (since our apartment was upstairs and had no room), we purchased a sweet Weber grill from Lowe’s. It’s one of their traditional round charcoal grills but it has a table attached to it so that you don’t have to bring one out or find yourself with no hands as you try to grill food and hold onto plates all at the same time. There’s even a sweet contained to hold your charcoal in. WE LOVE TO GRILL.
But, this means a change in how we eat. Because we’re grilling meat, it means we need to come up with a side dish that complements the grilled flavor. Sometimes that means we grill vegetables, and in this case, we grilled potatoes and white beans to incorporate into a salad.
Here you’ll get the rich grilled flavor on the steak along with heartiness from the potatoes and great northern beans. Lemon juice, dill and olive oil enhance the salad with a light dressing that won’t take away from the natural flavor of the main ingredients.
What I really love is how quickly this recipe comes together. Even with lighting the grill, this recipe can be made in under 45 minutes, with a majority of the time cooking and not actively preparing anything.
