One-skillet meals for lazy Sundays: Potato, Ham and Sweet Corn Hash

One-pot meals are the BEST. Why? Fewer dishes, later on, means easy clean-up, something I focus on when I’m busy in the evening and get home later than usual.

This week consists of evening board meetings, a volunteer/young professional expo at the City Market, and a fashion show on Saturday. Despite all that, I made sure to write in my planner then on Thursday we can open our homebrew! So excited to try it out. With all of the extra-curricular activities, I rarely have the desire or the time to cook longer dinners when it’s already 730 or 8 pm.

At one time, we used to eat all of our dinners at 8 pm, since that’s when Rahul got off work, but now we both leave some time between 4 and 5, meaning we can eat earlier and maybe even cook a dessert. It IS a pretty awesome schedule, but occasionally there are evenings when I’m meeting a friend,

Potato, Ham and Sweet Corn Hash

Makes dinner for 4, or dinner for 2 + lunch leftovers. You decide.

Ingredients:

  • 2 large russet potatoes, washed and diced
  • 1/2 package pre-cooked ham steaks, diced (or use pre-diced ham if you’re pressed for time)
  • 1 jalapeno, diced
  • 2 ears of corn, husked
  • 1 green bell pepper, diced
  • 1 small onion, diced
  • Bacon grease or 2 Tbsp olive oil
  • 1 tsp paprika
  • 1 tsp garlic powder
  • Salt and pepper

TIPS: Funny thing, I used bacon grease because my Skillet’s last use was to cook bacon. You can easily use olive oil, butter or whatever you prefer. Also, dice your potato as small as you can so you can speed up the cooking process.

Directions:

  1. Heat up your oil/grease over medium-high heat. Add the onion and let cook for 3 minutes.
  2. Add the diced potato and cook for 12 minutes. In the mean time, chop up your green pepper, jalapeno and cut off the corn from the cob. The easiest way is to set the corn cob upright in a large bowl that will catch the kernels.
  3. Using a knife, slowly cut off the kernels starting at the top and working your way to the bottom.
  4. Add the vegetables and diced ham and sprinkle your paprika, garlic powder, salt, and pepper on top. Stir to incorporate.
  5. Cook for another 5 minutes to heat the veggies and finish cooking the potatoes.
  6. All in all, this took about 25 minutes to make. Dice your potatoes while the onion cooks, dice your veggies while the potato cooks and you can easily save yourself some precious family time!
