Sometimes, you just need dip. Dip will solve problems.
Well, maybe not, but this dip will taste good and I promise you won’t be able to stop eating it. You may need to set a timer and have someone slap the crackers out of your hand.
This dip is a happy accident. We made a mix of blue cheese and cream cheese to stuff some jalapenos with, but we had a little extra left over. It seemed terrible to waste it, so we decided to turn it into a dip! Adding pieces of crunchy bacon and green onion transformed it and garlic enhances the flavor
Creamy Bacon and Blue Cheese Dip
- 8 oz cream cheese at room temperature
- 1/2 cup blue cheese crumbles (I used an applewood smoked blue cheese)
- 2 cloves garlic, minced
- 5 green onions, finely diced
- 4 pieces of bacon, cooked and crumbled
In a medium sized bowl, mix the cream cheese with the blue cheese, garlic, onions, and bacon until incorporated. Let chill in the refrigerator for an hour before eating. Enjoy on crackers, crusty bread or on your sandwich.
