A few friends came over last Sunday to cook out and chill before we all dragged ourselves back to our day jobs on Monday. The weather was beautiful and the rain finally subsided, leaving us with the perfect temperatures for sitting outside and just allowing ourselves to relax.
However, you still have to think about what you’re going to eat when you plan a cookout.
Luckily, I just compiled 18 Grillin’ and Chillin’ Cookout Recipes for Spring and Summer, which has a slew of options for carnivores and vegetarians. But we all know that people need something to munch on while you cook your meal. That’s where this Cool Cucumber Dill Dip comes in.
Looks a little chunky, doesn’t it? That’s because of the diced cucumber pieces, which makes this dip great for chips and less awesome for pretzel sticks (because I tried).
I already planned on making my Hot Chipped Beef and Green Onion Dip for the day, but Lindsey doesn’t eat beef or pork, so that’s why I created this Cool Cucumber Dill Dip. That, and I love putting dill in anything. It’s my favorite herb. When paired with the hot chipped beef dip, the cool cucumber dill dip is a refreshing compliment to the hot, cream cheese dip that it sat next to on the table.
I just felt the need to show you what it looked like on a potato chip, I guess. Cool unpainted fingernails.

Cool Cucumber Dill Dip
- 1 cup sour cream
- 1/2 cup mayonnaise
- 2 tsp dried dill
- 1 tsp salt
- 1/2 tsp garlic powder
- 2/3 cup finely chopped cucumber
- 1/4 cup chopped green onions
In a large bowl, whisk all of the ingredients together and chill for at least one hour before serving with potato chips, pretzels, sliced cucumbers, and vegetables.
