    I saute some small-dice onion and bacon lardons until the onion is transparent and the fat has rendered off the bacon. Remove all but a couple of tablespoons of the bacon drippings from the pan and then add the corn cut from several ears into the pan and saute for a few minutes until the corn is cooked though. I’ve always called it “fried corn,” and my husband (before he was my husband) thought I was insane the first time I made it and now it’s his favorite summer side dish.

    I like it straight from the cob, like we used to get from my grandpa’s garden. But corn salsa is a close second!
