April 22 – 28 is US VegWeek 2013, an opportunity for individuals, families, organizations or whomever to pledge that their meals will be meat-free for the entire week. I just signed up, and you should too!
Why should you pledge to eat meat-free? Well, lots of reason. Health, happiness, the key to living long… or just because. Obviously, I’m a meat eater, but in an effort to revitalize my body and my tastebuds, I’ve been choosing meat-free options when I eat out, and since I signed up for US VegWeek I plan on sharing several meat-free recipes with you!
If you pledge to participate in US VegWeek, they’ll send you emails with recipes, ideas and information about what others are doing.

Hm. I have more meat-free blogs than I thought! I’m excited to plan my menu for US VegWeek. I’m thinking greens, and carrots, maybe something out of my comfort zone like using endive or breaking out the grill to get down with some veggies. I guess you’ll just have to check back here to find out!
