When John and I crave red beans and rice, we usually pick up a box of Zataran’s from the store and prepare it with some sausages. This time I decided to make it from scratch using Randall Beans Pinto Beans.
All I needed to do was invade my spice cabinet. Heat and flavor primarily comes from the chili powder, cumin and ground red chipotle. Rice cooks in the chicken broth and the liquid from the canned crushed red tomatoes, giving it much more flavor than simply boiling it in water. This really makes a difference – anytime you can cook the rice in the liquid of the dish, do it.
White wine and garlic turkey sausages were a great complement to the dish. Use your favorite sausage or what’s accessible to you. I purchased these from Fresh Market, which always seems to have a knew flavor combination fairly regularly.
