Randall Beans Recipe: Pinto Beans and Shrimp Paella

You all know that I’m a huge fan of one pot meals, and this Pinto Bean and Shrimp Paella is perfect for a cast iron skillet.

Paella is a super flexible dish and can be made with your favorite vegetables and flavors. Here I used fresh green beans, a yellow pepper and cherry tomatoes. Many people use green peas, artichokes, eggplant, green peppers, whatever!

Rice and beans make this dish filling. For this dish, I decided to use packaged yellow rice with saffron, but you can use any Spanish/Mexican rice variety. You probably could use brown rice, but rice blends have more added flavor.

Randall Beans Pinto Beans were perfect for this – their flavor mixes well with the entire dish, and beans give protein making it a hearty vegetarian dish if you don’t add shrimp, like I did.

    When did you add the yellow pepper?

      With the green beans, cherry tomatoes and pinto beans, because I wanted to keep them somewhat crunchy. Otherwise you could add them with the crushed tomatoes and rice and let cook together.
