Says my colleague with a smile as I hand her a chocolate chip cookie.

This is your therapy, she says.

In reality she’s right. I’m sure I baked these cookies with part of my subconscious. It’s what I felt like John and I needed after getting our house broken into. However, he’s the one who looked at me and said something about wanting cookies, and I knew I bought milk chocolate chips just for these.

There’s no original Solid Gold Eats recipe here. I don’t want you to be fooled that these cookies came out of my own brain. They didn’t. But I’ve made this recipe so many times that to me, it is foolproof and I’m ready to share it with you.

Thick and Chewy Chocolate Chip Cookies by Brown Eyed Baker are my favorite chocolate chip cookie to make. I want my cookies to be fluffy, moist, but with a slightly chewy exterior. I also cannot stand it when homemade cookies become rock hard the next day. It’s like, such a waste, to make a big batch of cookies and then not want to eat them for breakfast tomorrow (because we all know that starting a day with a cookie is the best way to start a day). Of course, you can always dip them in milk to somewhat resurrect them from cookie purgatory, but why should they be like that in the first place?

Side note – there are only three in this photo because that’s all I had left. It was 8PM when I decided to finally photograph them because I know I would eat them all tonight with John, and so I had limiting lighting options. But who cares, THEY ARE AWESOME.

I add an extra teaspoon of vanilla to the recipe, and my vanilla is homemade with bourbon so it is strong. Your results may differ. I’m sure you could make this recipe with dark chocolate chips if you wanted to, but the milk chocolate really works here.

I’m not sure what the secret to perfectly chewy cookies actually is. Maybe you do? It feels like the butter is what’s keeping the cookie soft, but maybe it’s also the baking soda or the perfect ratio of ingredients. I do care to know because then I can take this technology to another cookie and save it from cookie purgatory too. Brown Eyed Baker has posted other chocolate chip cookies on her blog and I have tried many of them, but none of them are like this chewy chocolate chip cookie.
